Spent all morning in Emerge at North York General. Turns out my wife has gallstones. Not the immediately dangerous kind, thank goodness, but surgery down the road. Also, a low fat diet forever, for my wife and, since I live with her, for me too I suppose. Alas.

I don't hate you at all.It's clear you've either never had any good goat or sheep cheese though.
Both have significantly less fat and/or cholesterol than cheese made from cow's milk.
Try anything on this list - I've had almost all of them at one time or another. Start with the Capranos - aged or not. They grill and melt into eggs beautifully too.

Cow's milk cheese is preferred here only because most of us were raised on Kraft and don't know any better.

You're talking cheese? Actually I love goat cheese on a pizza. Good to know its low cal and I will explore your list.
Say what? I'm 68, my gall bladder was taken out in 1991 and I still enjoy all the cheese I want, ditto my father who was going strong at 81 until killed in a car accident.
While some people may not be able to tolerate certains fats, many have no problems at all following surgery. Don't despair!

Saturated fat is the Devil. You'll never be a fit and happening skinny bitch with cheese eating as part of your diet anyway. Embrace your inner ovo-vegetarian!
